Rose Shortbread Cookies With Yogurt Glaze Recipe

Shortbread Cookies are cookies that don’t require cookie shapes cutters or a rolling pin. Instead of using cookie cutters, the cookie batter is rolled into a log and placed in the fridge or freezer to firm up, once firm you can slice it into rounds and bake. They’re a great option to try if it’s one of your first recipes.

These Rose Shortbread cookies are sweet and crisp. They have a light rose flavor from the rose petals and are topped with yogurt and rose petals that’s as easy to make as it is to eat – and will leave your kitchen smelling heavenly!

Rose Shortbread Cookies With Yogurt Glaze Recipe

Ingredients
For the cookies:
  • 1 cup butter
  • 1/2 cup sugar
  • 1 tablespoon lemon zest
  • 1 teaspoon dried rose petals
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all purpose flour
For the yogurt glaze:
  • 1 1/2 cups yogurt
  • 3 tablespoons sugar
  • 1 teaspoon lemon juice
  • dried rose petals (garnish)
Instructions
To make the cookies:
  1. In a large mixing bowl, cream together the butter, sugar, lemon zest, dried rose petals, and vanilla until light and fluffy, about 3-5 minutes.
  2. Add the flour and beat until combined, and the dough forms a ball.
  3. Generously flour a flat surface and roll out your dough to 1/4 inch thickness. Use cookie cutters of your preferred shape to cut out the dough and carefully transfer to a parchment lined baking sheet.
  4. Cover the baking sheet with plastic wrap and freeze until firm (10-20 minutes).
  5. Preheat the oven to 350 degrees. Bake the cookies on the middle rack of the oven for 12-14 minutes or until just lightly golden. Let cool on the baking sheet 5 minutes, then transfer to a wire cooling rack to cool completely.
To make the glaze:
  1. In a small bowl, whisk together the yogurt, sugar and lemon juice.
  2. Once the cookies have cooled, dip top of cookies in the glaze.
  3. Sprinkle rose petals on top, then let the glaze harden before serving.
