Taste and aroma
Butterfly pea flower tea is mild, smooth and slightly earthy, a little like a gentle green tea without the bitterness. Most of the fun is the color: it brews a deep, natural blue that turns violet-purple when you add lemon or lime.
How to brew
- Add 5–7 dried flowers to a cup.
- Pour over 250 ml (8 oz) of hot water at 90–95°C (195–205°F).
- Steep for 5 minutes, until the water is deep blue.
- Add honey to taste and a squeeze of lemon or lime to turn it purple. For iced tea, brew double strength and pour over ice.
- For service, plan on about 2–3 g of flowers per 250 ml cup.
Ways to use it
- Blue tea, lattes and color-changing lemonades for café menus
- Color-changing cocktails and mocktails for bars (recipes: color-changing cocktails)
- Natural blue color for rice, noodles, bread, cakes and desserts
- Soap, cosmetics and other craft products
Storage and freshness
