- 2 cups glutinous rice
- 2-3 tbsp of butterfly pea flower
- 2-3 cups water
- 1 can of coconut milk
- 1/2 c sugar
- 1 tsp salt
- 1 ripe mango
Instructions:
- Mix butterfly pea flower in hot water. Soak glutinous rice in butterfly pea flower water overnight.
- Drain the rice, place in steamer basket and steam for 17-18 minutes.
- Mix coconut milk, sugar and salt together. Simmer on low heat for 4-5 mins until it thickens, remove from heat.
- Once rice is done, add 1 cup coconut mixture and mix throughly. Top rice with mango slices and coconut sauce.
